Buffalo Chicken Grilled Cheese


If you choose to only make one pinterest recipe, let it be this one. It is so so simple, and will totally charm all of your friends. It is easy, cheesy and delicious. The perfect combination.
This recipe is especially perfect for hot summer days like today (can you say 95 degrees?!). Dinners that don't involve an oven are just what we need for this kind of weather. 




Feel free to print these recipe cards for your personal collection. 



First, preheat some olive oil in a skillet over medium-high heat. Then, toss in some garlic (or garlic scapes!) and your cut up chicken. Cook until done.


Meanwhile, stir together shredded cheddar cheese, cream cheese and ranch or blue cheese. This is not a science, you pick what proportions you want. I love love cheese so I used a ton of cream cheese. 


Spread the cheese mixture on one side of your bread and butter on the other.



When your chicken is done, toss it with Buffalo sauce. I used store-bought but there are a ton of good recipes out there to make your own. I don't want to be the bearer of bad news but it is almost completely made out of pure butter ...with a splash of hot sauce. Not the healthiest recipe, but that's not the point. 


Place your chicken on top of your cheese spread and close your sandwich.



Then, grill until crispy and golden brown. The cheese will be all melted in with the hot sauce at this point and the men in your life will be buzzing around the stove waiting for you to fill their plates.



And that is it! It is so simple but really is a crowd pleaser. Alec was upset that there wasn't enough chicken for him to have a second sandwich, so make sure you make enough of yours!
